Ingredienti

1 melanzane
1 cipolla
1 sedano
1 pinoli
1 olive verdi
1 olio e aceto
1 sale e pepe
1 zucchero
1 capperi
1 pomodori maturi

Istruzioni per la preparazione

Far riposare le melanzane per 4 ore col sale per perdere l'acqua.
Tagliare il sedano, la cipolla, denocciolare le olive, mettere a bagno i
capperi, se sono sotto sale. Sciacquare le melanzane (che devono
prevalere sulle altre verdure), asciugarle, tagliarle e friggerle molto
al dente in qualche cucchiaio di olio di frantoio. Togliere dalla padella
le melanzane, friggere nello stesso olio le cipolle. Quando le cipolle
hanno preso un bel colore dorato aggiungere i pomodori sbucciati e a
pezzi, le olive, i sedani, sale e pepe. Quando i sedani si sono
inteneriti, unire i capperi e i pinoli.
Per preparare la salsa agrodolce sciogliere 2 cucchiai di zucchero e 2 di
aceto tiepido (questa dose può bastare per 500 gr di melanzane),
mescolare alle verdure e fare insaporire per pochi minuti ancora. Questo
antipasto si può conservare per un anno in vasi sterilizzati per 20
minuti, oppure si può congelare in vaschette apposite.
