Ingredienti

250 ml latte
2 buccia grattugiata di mandarino
160 g zucchero
5 tuorli
16 g colla di pesce
150 ml panna
3 succo filtrato di mandarino

Istruzioni per la preparazione

Portare a bollore il latte con la scorzetta di mandarino. Lasciarlo in
infusione per 30 minuti. In una ciotola, a parte, lavorare a lungo i
tuorli con lo zucchero. Versare a filo il latte. Ponete la crema su
fiamma bassa e, senza smettere di mescolare, fare velare il cucchiaio.
Ammollare la colla di pesce in acqua fredda, strizzarla ed unirla alla
crema bollente con il succo dei mandarini. Lasciare raffreddare la crema
mescolandola ogni tanto. Montare la panna ed aggiungerla delicatamente
alla crema fredda. Pennellare con olio di mandorle lo stampo, poi versare
la crema. Porre lo stampo a solidificare in frigorifero per una notte.
Sformare il dolce sul piatto da portata e decorarlo con grossi ciuffi di
panna montata e frutta fresca a piacere.
