Oltre a essere una "bufala" di proporzioni colossali, le cosiddette e spesso fantomatiche intolleranze alimentari, che vanno tanto di moda, sono diventate l'occasione per un'autentica speculazione, diciamo pure ruberia, a causa dell'intervento di operatori senza scrupoli.

«In assenza di test scientifici certi sulle intolleranze alimentari - dice senza perifrasi il professor Eugenio Del Toma, nutrizionista tra i più noti e presidente onorario dell'Associazione Dietologi italiani - dilagano i test alternativi, sui quali abbiamo un'unica certezza: si tratta di esami particolarmente costosi che destano molte perplessità. Su queste presunte intolleranze, le quali ancora oggi non sono sufficientemente provate, è stato costruito un vero assurdo dal punto di vista logico - continua Del Toma - secondo il quale le conseguenti difficoltà digestive provocano un aumento di peso. Vietando alcuni cibi, con conseguenti carenze vitaminiche e minerali, grazie a indicazioni dietetiche assai restrittive, addirittura dichiarando guerra a pasta e riso, in poche parole con la malnutrizione, si dovrebbe tutelare e difendere il nostro organismo dall'aumento di peso. È bene ricordare che le intolleranze alimentari vere e proprie esistono e sono sostanzialmente quella nei confronti del glutine che dà origine alla celiachia e l'intolleranza al lattosio alla quale in molti casi si può fare fronte, senza tanti problemi, tornando a utilizzare il latte in quantità progressivamente sempre più elevate. È tuttavia certo che alcune sostanze tossiche, diversi additivi, certi conservanti, possono provocare, infine, reazioni più o meno tossiche. Poi ci sono le allergie che coinvolgono il sistema immunitario e infine le manifestazioni definite da Kaplan "allergie non allergiche" che non sono correlate, insomma, al sistema delle immunoglobuline».
«Invece per le intolleranze enzimatiche più frequenti - continua Del Toma - come il deficit di lattasi, più noto come intolleranza al lattosio disponiamo di un accertamento utile: il test del respiro il quale dopo l'ingestione di una quantità standard di lattosio, permetterà di valutare, nell'aria espirata, le tracce dei gas derivati dalla fermentazione del lattosio non digerito. I gastroenterologi hanno rilevato però, anche in questo caso, che soltanto un terzo o al massimo la metà dei soggetti "etichettati" come intolleranti al lattosio lo è veramente (spesso si tratta soltanto di colon irritabile) quando viene sottoposta al test. Ciò significa che in troppi casi è stata imposta, senza un'adeguata diagnosi, l'astinenza dal latte e dai suoi derivati creando inutili difficoltà».
In conclusione, le intolleranze fanno ingrassare? «Assolutamente no - termina il nutrizionista - Al contrario, l'"intolleranza" genera problemi digestivi che possono portare soltanto al malassorbimento di una parte dei nutrienti; quindi, semmai, al dimagramento e non all'aumento di peso. Il meccanismo di reazione, cioè d'intolleranza, infatti, può rendere inutilizzabili le calorie potenziali di certi alimenti, ma in nessun caso potrà mai aumentarne il valore calorico. Ecco spiegato perché occorre diffidare degli operatori, quantomeno poco documentati, che promettono miracoli dall'eliminazione dei cibi sotto accusa».
