Come si cura la celiachia?

Ma il glutine è volatile? Mi spiego meglio. Se nel forno inserisco una pizza con glutine e una pizza senza glutine, in due teglie completamente separate, c'è il rischio contaminazione? Oppure, se "giro" la pasta con glutine con un cucchiaio e poi giro la pasta senza glutine con lo stesso cucchiaio questa sarà contaminata?

Il figlio di un mio amico da quando è piccolo gli è stato riconosciuto di essere Celiaco e quindi aveva a disposizione delle ricette dove gli venivano dati gratuitamente gli alimenti senza glutine, adesso che ha 6 anni, il medico prima di rifare le ricette, (forse dopo le riforme sanitarie) ha voluto che il bambino facesse degli ulteriori accertamenti per poter continuare ad usufruire delle ricette. Dopo le analisi gli hanno detto che il bambino non è Celiaco ma è intollerante al glutine (oltre che ad altri alimenti, tipo, Latticini, pomodori, uova ecc.), e quindi non ha più diritto ad avere la ricetta per avere gratis gli alimenti, che invece un Celiaco ha. Faccio presente che il mio amico ha uno stipendio da operaio lavora solo lui con moglie e due figli. Questo non mi sembra giusto, e vorrei sapere cosa si può fare per avere la possibilità di far mangiare decentemente questo bambino senza dover spendere un fortuna per gli alimenti a lui dedicati che costano uno sproposito.
